Carne/Beef


Ingredients

1 can corned beef
1 medium potato cubed
1/2 tsp. olive oil
1 small pack sazón seasoning
2 tblsp. sofrito
2 tsp. capers
1 tbslsp. Manzanillo olives
1 8oz. can tomato sauce
1/2 cup water
salt and pepper to taste


Directions
Place the oil and the sofrito in a saucepan. Cook for 3-4 minutes.

Add the alcaparras (capers), olives, tomato sauce, sazón, water and cubed potatoes.

Simmer for about 5 minutes.

After 5 minutes, add the corned beef, salt and pepper. It will be watery but you may add a little more water if needed.

Cook on low heat about 20 minutes. The potatoes should be soft by now.

Tips
This is usually served with fried amarillos (yellow plantains), white rice, and a salad.

Forward shorward

I love texting but whats up with the forwarding? Do ppl have nothing better to do than send stupid, pointless chain letters? Will God really stop loving me, if I don't forward this message to 10 ppl? lol please! its ridiculous and childish. I wish I had a way to block them. Seriously....

Aldi

I just bought a whole cart of groceries for $100. I would spend $200 in Wegmans. Although I love Wegmans....Im on a budget. Aldi stores are perfect for staying on a budget. I dont recommend buying lunch meat or packed meats there but everything else taste great. I still cant believe my cabinets and fridge are well stocked and all for $100! wow

Starbucks I love you but come onnnnn


Not sure why I spend $4 on a Starbucks mocha frappachino that I could do without. They taste so good! It's MOCHA and whipped cream for goodness sake.But I'm thinking of investing in some kind of speciality drink maker. I'm sure in the end I will be saving a lot of money. And theres always Dunkin Donuts....Spending $.99 on a hot choco or $2.00 on a coffee adds up but its its better than Starbucks prices. And there coffee is just UNBEATABLE!! Well, stay away from Starbucks cause I'm pretty sure they put crack in the drinks! Mmmmm mochaaaa...:)

Black History Month in Philadelphia

The African American Museum in Philadelphia is a must see! I thought it was very educational. It's a great place to visit with friends and family:)

Grin and ferret



It amazes me when people compare ferrets to rats(not that's there's anything wrong with rats). They are related to otters, weasels, minks, etc. I have two ferrets, a boy named Rocco and a girl named Heidi. When my guest meet them for the first time they usually say something along the lines of "eww" or "gross. Then after spending 10 minutes with them, they want to own one. If I had to describe my ferrets, I wouldn't compare them to rats at all, rather a mixture of a dog, cat, and a monkey:). They even use the litter box! how cool is that? I think the biggest beef people have with ferrets is that they are known to bite. Yes they do bite when they are kits (babies) but with a little training that all goes away. Now they play bite like a dog would. Actually, they usually nip you to start up a game of tag:) To me nothing about their personality is like a rat. Give them a chance! You'll be surprised at how awesome the truly are!

On the Menu Today....

Today I made Thai Chili Chicken Skewers! If you like a little spice in your bite your going to love this one.

Here are the ingredients for will need:

1 1/2 pounds of chicken breast
1/4 cup finely chopped parsley
1/3 cup Thai Chili Sauce
1/2 cup dry plain bread crumbs
1 egg
2tbsp of soysauce
8 wooden skewers soaked in water for 20 minutes( very important to soak)
Pita bread, shredded lettuce, diced tomatoes, and silvered onions for garnishing.

1.Mix together chicken, cilantro, egg, chili sauce, soy sauce, bread crumbs, until combined
2.With wet hands form 8 equal portions onto skewers (make sure you cover end of skewer)
3.Roast skewers on a foil lined baking sheet in a 500 degrees F oven for 20 minutes or until cooked through.
4.Serve with pita bread and garnish with the lettuce,tomatoes,an onions.
